Chicken Parmesan

Staff writer Kate Harlow's kids approved of this chicken parmesan served with curly noodles. 

My search for kid-approved dishes continues. There are only so many days in a row I can eat peanut butter. I should invest money in JIF just based on the amount my kids consume. 

As I was on the hunt for non-peanut butter food recipes, I stumbled upon the Cafe Delite food blog run by Karina. I found a recipe that had all the potential of be a kid and mom-approved dinner with her Chicken Parmesan

It's one of those dishes that I love to order at restaurants but never think to make at home. But her recipe seemed easy enough and I am a sucker for fresh mozzarella. I could happily sit and eat a whole ball just out of the package. 

I followed her recipe with the sole exception being that I didn't make the homemade marinara sauce and instead used a jar I already had in my pantry. It was a snap to make and a step up from our normal spaghetti. 

Served on top of some spiral noodles with some garlic bread and a side salad I am happy to announce this recipe got a thumbs up from two somewhat picky kids as well as this mom.
