Summer cooking for me is all about ease.
I don’t want anything that is too time consuming. I’d rather be playing outside with my kids. So the name of the game is fast but still mouthwatering. It’s a tough balance to strike.
I found a recipe that hits the make with food blogger Gina Homolka’s Basil-Parmesan Crusted Salmon cooked in the air fryer.
I love recipes in the air fryer in general, but in the summer months, they are especially great because it's another way I can cook without heating up my entire house.
Keeping it cool and keeping it tasty is the way to go with dinner if at all possible this summer at the Harlow house.
This recipe is perfect in every way. It’s fast, easy, absolutely scrummy and air conditioner from working overtime. It’s a win-win-win-win.
The recipe calls for only a handful of ingredients including salmon filets with lemon juice and salt and pepper to season. Then mayonnaise, fresh basil and parmesan cheese to whip together for the “crust.” After seasoning the filet and spreading the mayo mixture, I just sprayed some olive oil on the pan of my air fryer and cooked the filets for about eight minutes.
Grabbed some lettuce from my garden and that was it.
Dinner was served.
One bonus of this recipe? My almost-two-year-old daughter loved it. She ended up eating most of my husband’s fish.
