White Chocolate Fruit Bites

We love traditional holiday baking, but we’re also fond of taking shortcuts when the season gets a little hectic. These festive treats yield a pretty plate, but don’t require an entire afternoon in the kitchen.

White Chocolate Fruit Bites


■ 8 ounces good quality white chocolate

■ 1 teaspoon orange zest

■ 1 tablespoon bourbon

■ ¼ cup chopped pistachios

■ ¼ cup coarsely chopped dried cranberries

■ ¼ cup diced dried apricots



Melt white chocolate in top of double boiler over simmering water. While chocolate melts, line a 9x5 loaf pan with plastic wrap and coat with cooking spray.

After chocolate is melted, stir in orange zest and bourbon, followed by the chopped nuts and fruits.

Pour mixture in prepared pan and smooth surface. Allow to cool, then cut into 1-inch squares. Store in tightly covered container in cool place.
