No need to make reservations or maintain proper social distancing when

you plan a romantic dinner at home. This menu is portioned to serve two, with the salad and dessert easily prepped earlier in the day. At dinner time, join forces in the kitchen with one putting the finishing touches on the risotto while the other sears the scallops. Chenin Blanc would be a lovely partner to this menu, but if reds are your preference, try a Pinot Noir. End your meal with a steaming espresso as the perfect accompaniment to the rich chocolate mousse.

Spinach Salad with Citrus Dressing

INGREDIENTS:

■ 2-3 cups baby spinach

■ One half of a 6-ounce package fresh raspberries

■ 2 tablespoons sliced almonds, toasted

■ 2 tablespoons crumbled feta cheese

■ 1 orange, divided

For the vinaigrette:

■ 1 tablespoon minced shallot

■ 1 teaspoon Dijon mustard

■ 2 tablespoons white wine vinegar

■ 2 tablespoons honey

■ 2 tablespoons extra-virgin olive oil

■ Salt and freshly ground black pepper

INSTRUCTIONS:

Toast almonds in skillet over medium heat until lightly toasted and fragrant, 3-5 minutes.

Cut orange in half. Peel and section one half for the salad; juice the remaining half for the vinaigrette.

Combine the orange juice with shallot, mustard, vinegar, honey and olive oil in shaker. Shake vigorously to combine. Season with salt and pepper to taste.

Divide spinach between two salad plates. Top with raspberries, orange segments, almonds and feta. Drizzle vinaigrette over the plated salad greens just before serving.
