■ Ground beef patties

For the mayo: combine ½ cup mayonnaise and 1 chipotle pepper in adobo sauce in blender or food processor. Blend to combine.
For the guacamole: mash 2 small avocados in bowl. Add 1 Roma tomato, seeded and diced; 2 cloves garlic, crushed; 2 tablespoons minced red onion; ¼ cup minced cilantro; juice of half a lime.
To build your burger: Grill the ground beef patties to medium, toast bun during last minute of cooking and top burger with slice of cheese so it begins to melt. Spread chipotle mayo on both halves of bun. Layer with a thick slice of tomato, then the cheese-topped burger, bacon, guacamole and crushed nacho chips. Flatten the sandwich slightly with top half of bun.
