Pecan Pie Crunch

We love traditional holiday baking, but we’re also fond of taking shortcuts when the season gets a little hectic. These festive treats yield a pretty plate, but don’t require an entire afternoon in the kitchen.

Pecan Pie Crunch


■ 1 cup butter

■ 1 ½ cups brown sugar

■ 6 tablespoons Karo syrup

■ 1 teaspoon vanilla

■ 1 ½ teaspoons baking soda

■ 1 cup pecan halves

■ 1 box oatmeal cereal (Try Quaker Oat Squares)



Combine cereal and pecans in large glass bowl.

In medium saucepan, combine butter with brown sugar and white syrup. Heat over medium until butter melts; continue to cook until mixture begins to boil, then time for 3 minutes.

Remove pan from heat and stir in baking soda. Mixture will foam up and double in volume. Stir in the vanilla.

Pour hot caramel over the cereal and pecans, stirring to coat evenly.

Place bowl in microwave and heat for 90 seconds. Stir mixture and heat again. Stir and heat one final time for 45-60 seconds. Watch the mixture closely so it does not burn.

Spread on two large baking sheets covered with parchment paper and allow to cool. Store in an airtight tin.
