There are so very many ways to enjoy strawberries, but none better than straight from the garden, warm and ripe.

If your trip to the strawberry patch resulted in very many berries, try one of these tasty desserts — varying from super simple to a bit more involved.

We think you’ll find them very, berry delicious.

Brownie Strawberry Shortcakes


For the brownies:

■ 1 cup unsalted butter

■ 1 cup semisweet chocolate chips

■ 2 cups all-purpose flour

■ 2 teaspoons baking powder

■ 1/2 cup dark cocoa powder

■ 1/2 teaspoon salt

■ 2 cups granulated sugar

■ 3 large eggs

■ 1 tablespoon light corn syrup

■ 1 teaspoon vanilla extract

For the topping:

■ 8 ounces cream cheese, room temperature

■ 1 cup whipping cream

■ 1/2 cup granulated sugar, divided

For the berries:

■ 3 cups diced strawberries

■ 1/4 cup granulated sugar

■ Additional whipped cream and purchased chocolate syrup to garnish



For the brownies:

Preheat oven to 325 degrees. Line a 9x13 pan with parchment paper, allowing edges to overhang, then coat with cooking spray. Set aside. In a double boiler over simmering water, melt together butter and chocolate chips. Stir until smooth. Allow to cool while preparing remainder of brownie ingredients. In a separate bowl, whisk together flour, cocoa powder, baking powder and salt. In second bowl, whisk together sugar, eggs, corn syrup and vanilla. Temper the wet ingredients with 1/4 cup melted chocolate. Gradually whisk in the remaining melted chocolate, mix well. Set aside to cool for 5 minutes. Once cooled, add chocolate mixture to the sifted dry ingredients. Mix by hand until moistened. Spread in prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center shows moist crumbs. Remove to a cooling rack.

Cool in the pan completely, then carefully lift out by the parchment.

For the topping:

Meanwhile, toss strawberries with granulated sugar, gently stir and allow the strawberries to macerate. Chill until time to assemble Using an electric mixer, whip softened cream cheese on medium-high gradually adding 1/4 cup sugar. In separate bowl, whip the cream until stiff peaks form, add remaining sugar. Using a large rubber spatula, fold the whipped cream into the cream cheese mixture. 

To assemble:

Using round cookie cutter, cut 12 circles from the pan of brownies. Place one brownie circle on a serving plate. Top with a spoonful of the cream cheese mixture and diced strawberries. Repeat layers, ending with a dollop of whipped cream, chocolate syrup and mini chocolate chips.
